In terms of taste characteristics and purity, the black mussel surpasses even the infamous white mussel which is farmed along the coastlines of the Mediterranean and the Atlantic Ocean.
The chemical characteristics of the Black Sea's waters and its lower solenity are especially favourable for growing black mussels. It takes just a year for them to be fully grown and ready to eat, and that period may be as short as 8 months if the weather is favourable.
